Beef Quesadilla Recipes

Quick and easy dinner with this minced meat. Starting with ground beef quesadilla recipes and making your own taco seasoning, this is the perfect meal for a week. Serve with sour cream and sauce.

Ingredients for beef quesadilla recipes:

  • Cascadia.
  • 2 cups (200 g) grated Monterey Jack cheese (or others) (note 1)
  • 3/4 cup cilantro / chopped cilantro
  • 1 cup corn kernels (frozen, thawed, or frozen)
  • Complete one of the options below (beef, chicken, or vegetables)

QUESADILLA seasoning mix:

  • 1 teaspoon onion powder, dried thyme, salt.
  • 2 teaspoons cumin powder, red pepper.
  • Teaspoon black pepper, cayenne pepper (optional).

Meat stuffing selection:

  • 1/2 tablespoon olive oil.
  • 2 cloves garlic, minced.
  • 1/2 onion, finely chopped.
  • 500 grams / 1 pound minced meat / minced meat.
  • 1 small red bell pepper/bell, diced.
  • 2 tablespoons tomato paste.
  • 1/4 cup (65 ml) of water.

Stuffed chicken:

  • 2 1/2 tablespoons olive oil.
  • 500 g / 1 lb chicken thighs, skinless (note 2).
  • 2 cloves garlic, minced.
  • 1 small onion, cut and sliced.
  • 1 small sweet red pepper.

Stuffed with vegetables:

  • 2 tablespoons vegetable oil.
  • 1 onion, diced.
  • 2 cloves garlic, minced.
  • A box of black beans, filtered (400 g / 14 oz).
  • 1 capsule/bell, cubed (any color).
  • 1 cup corn (canned or frozen).
  • A quarter cup of tomato paste.
  • 1/4 cup (65 ml) of water.

Instructions for beef quesadilla recipes:

  • Place the tortilla on the counter. Sprinkle one side with a little cheese, while filling the filling of choice. Sprinkle with corn and coriander and cover with cheese. Fold it in half.
  • Heat a nonstick skillet over medium-low heat (without oil, if the pan is not sticky, use 2 teaspoons).
  • Place the quesadilla in a pan, press gently, with the lid covered. Cook for 3 minutes until the bottom is golden and crispy.
  • Transfer to a cutting plate, cut in half. Serve immediately!
  • Dip sauce options: sour cream, salsa, avocado sauce (pictured)

Spice Mix:

Mix the ingredients in a small bowl. Use one of the fill options below.

Stuffed with meat:

  • Heat oil in a pan. Add the onions and garlic and cook for two minutes.
  • Add the meat and cook, and break it as you go. Once it changes from pink to brown, add pepper. Cook for 1 minute.
  • Add tomato paste, water, and spices. Cook for 2 minutes. Transfer to a bowl, cool.

Stuffed chicken:

  • Spray the chicken with 1 tablespoon of oil, stir to cover. Sprinkle on the seasoning of the mixture, stir well to cover.
  • Heat 1 tb of oil in a large bowl over high heat. Add the onions and garlic and cook for two minutes. Add the pepper and cook for a minute. Transfer to a bowl, cool.
  • Return the pan to the stove and reduce the medium heat. Add the rest of a tablespoon of oil. Add the chicken and make for 3 minutes golden brown. Turn and cook for 3 minutes until ready.
  • Transfer the chicken to the cutting board, rest for two minutes, then bloom and cool. Mix with the pepper mixture.

Stuffed with vegetables:

Heat and Add the onions and garlic and cook for two minutes. Add the pepper and cook for a minute.
Add beans, corn, tomato paste, water, and spices. Cook for 2 minutes. Transfer to a bowl, cool.

Recipe Notes:

  • Skip the corn for vegetable quesadillas, it is already filling.
  • Cheese options: Monterey Jack was my favorite because it contains melted mozzarella but has more flavor. It is American cheese, available at Costco in Australia (it was also sold at Harris Farm). Cheddar, tasty, or Colby are also great, but any suitable melted cheese is perfect here.
  • Other proteins: use the recipe to pack ground pork/turkey, veal, or chicken. Use the “chicken stuffing” recipe for thin slices of meat, pork, veal, turkey, or veal. Juicy cut, the better.
  • General notes:
  • Makes 6 generously filled or 8 regular quesadillas
  • Cold stuffing before assembling the tortilla = crispy
  • Freezer option: assemble the quesadillas and then freeze them before cooking. Wrap in plastic wrap and then put it in bags with airtight closure or in airtight containers. Thaw and cook in a recipe. Microwaves can be defrosted for approximately 40 seconds.
