A perfect and delicious homemade vegetable soup to pair with raw bread. Super easy and tasty.

Ingredients for vegetable soup:

  • 2 tablespoons of extra virgin olive oil.
  • 1 large onion, on a plate.
  • 3 garlic cloves, minced.
  • 3 medium carrots, with money.
  • 3 cauliflower stems, plate.
  • 2 medium potatoes, peeled and diced.
  • 2 numbers of Italian spices.
  • 4 cups vegetable stock + 1 cup water.
  • 2-15 oz of tomatoes can eat.
  • 1 cup corn (used to melt frozen).
  • 1-15 oz beans, can drain and rinse (optional).
  • 1 bay leaf.
  • 1/4 cup chopped parsley
  • 1 lemon juice to taste.
  • 1 1/2 tablespoons kosher salt, more flavor.
  • Fresh black pepper.

Instructions vegetable soup:

Step 1:

Heat the oil in a large pen in medium-low. Once heated, add the onion, garlic, and a teaspoon of kosher salt and cook for about 8 to 8 minutes.

Step 2:

Add carrots, celery, potatoes and cook for another 5 minutes, stirring.

Step 3:

Add the Italian seasoning and cook for one more minute.

Step 4:

Add the broth, water, tomatoes, corn, beans, bay leaves, and pepper. Bring to a boil, reduce the heat to low, and bring to a boil, stirring for about 35 minutes, until the vegetables are tender.

Step 4:

Remove from the heat and add the parsley and lemon juice. Remove the bay leaf and season with salt to taste (don’t be shy, I mixed a lot of salt!) And pepper.

Step 5:

Serve hot with raw bread.
