  • 2-3 large carrot, grated or chopped (2 heaping cups)
  • 2 cups cooked quinoa
  • 1/2 cup chopped almonds or walnuts
  • 1/4 cup minced fresh parsley
  • 1/3 cup apple chutney
  • chopped or whole mixed salad greens, like spinach or arugula (optional)
  • salt to taste

Preparation
  1. Prepare the ingredients and chill them in the fridge. For the best texture, use quinoa that is cool and crumbly rather than warm and sticky.
  2. Add all ingredients to a mixing bowl and toss together until evenly combined.
  3. Serve immediately plain, with chips, or over fresh greens.

Notes

For eating this salad over several days, keep the ingredients in separate containers in the fridge and combine individual portions when ready to eat. The mixed salad does not stay fresh for more than a day.
