Ingredients
  

Black Bean Filling
  • 1 (14-ounce) can of black beans (rinsed and drained)
  • 1/4 cup salsa
  • 1 tablespoon taco seasoning
Taco Assembly
  • 6-8 small flour tortillas
  • 1/4 – 1/2 cup olive oil or butter for frying
Cilantro Lime Sauce
  • 1/4 cup avocado oil
  • 1/4 cup water
  • 1/2 cup chopped green onions
  • 1/2 cup cilantro leaves
  • 2 cloves garlic
  • 1/2 teaspoon salt
  • juice of 2 limes
  • 1/2 cup sour cream (sub avocado to keep it dairy free / vegan)

Method
 

Preparation
  1. Blend the cilantro lime sauce ingredients until mostly smooth, then set the sauce aside.
  2. Process the black beans, salsa, and taco seasoning together until combined.
  3. Transfer the bean mixture to a skillet with a drizzle of oil and cook for about 5 minutes to soften and blend the flavors from the salsa.
Assembly
  1. Spread a few tablespoons of the black bean filling onto each flour tortilla.
  2. Fold each tortilla in half and repeat with the remaining filling to make about 6-8 tacos.
Cooking
  1. Heat oil or butter in a skillet over medium heat.
  2. Fry the folded tacos in the skillet over medium heat until the tortillas are crispy and golden brown.
  3. Serve the crispy tacos with cilantro lime sauce.

Notes

Air Fryer Instructions: Fill the tacos, spray with avocado oil, and air fry at 375°F/190°C for 7 minutes, flipping halfway through.
