Ingredients
  

Salad
  • 2 heads broccoli, cut into small florets
  • 2 cups chopped purple cabbage
  • 1/2 cup golden raisins
  • 1/2 cup slivered almonds
  • 1/2 cup chopped green onions
Dressing
  • 2/3 cup orange juice
  • 2 tablespoons miso
  • 2 tablespoons almond butter
  • 1 shallot
  • 2 tablespoons canola oil

Method
 

Preparation
  1. Combine the broccoli, purple cabbage, golden raisins, slivered almonds, and green onions in a bowl.
  2. Add the dressing ingredients to a food processor and blend until the mixture is smooth.
  3. Pour the blended dressing over the salad mixture and toss until evenly coated.
  4. Serve immediately, adding more orange juice as needed to adjust the moisture level.

Notes

Miso Substitute: Soy sauce can be used in place of miso and works well. This salad can also be made with a handful of cooked quinoa or a little crumbled bacon for a different variation. If you prefer a salad with more dressing, double the dressing amount. If using almond butter instead of miso, adjust with additional salt to taste.
