Chicken Caesar Lasagna with Creamy Caesar Sauce and Spinach

Ingredients
  

Creamy Caesar Sauce
  • 2 tablespoons butter
  • 3 tablespoons flour
  • 1 1/2 cups milk
  • 4 oz / 115 g light cream cheese
  • 1/2 teaspoon salt
  • ground black pepper, to taste
  • 1/2 cup Caesar dressing
  • 1/2 cup Parmesan cheese
Lasagna Layers
  • 9 lasagna noodles
  • 3 cups cooked, shredded chicken
  • 3 cups Mozzarella cheese
  • 3 cups chopped spinach or kale
  • 1/2 cup sun dried tomatoes packed in oil

Method
 

Preparation
  1. Melt the butter over medium high heat. Stir in the flour and cook for 2-3 minutes.
  2. Gradually add the milk, stirring as you pour, until the mixture becomes smooth and creamy.
  3. Whisk in the cream cheese, Parmesan, and Caesar dressing until the sauce is fully combined. Taste and adjust as needed.
  4. Cook the lasagna noodles according to the package directions.
Assembly
  1. Add the chicken to the sauce mixture and keep it warm over medium low heat.
  2. Grease a 9×13 pan and preheat the oven to 375°F (190°C).
  3. Place 3 lasagna noodles in the pan. Add half of the chicken mixture, 1 1/2 cups kale, 1/4 cup sun dried tomatoes, and 1 cup mozzarella.
  4. Cover with 3 more noodles and repeat the layers. Finish with a final noodle layer and the remaining 1 cup cheese.
Baking
  1. Cover the pan with greased foil and bake for 30 minutes.
  2. Remove the foil and continue baking for another 5-10 minutes to brown the cheese.
  3. Allow the lasagna to stand for 10 minutes before cutting and serving.

Notes

You can create more layers by cooking a few extra noodles and spreading the filling across 3 or 4 layers instead of 2. Oven-ready noodles can also be used, but adding a few tablespoons of water to the dish before baking can help provide the needed moisture.
