Preparation
- Whisk the sauce ingredients together until the mixture is smooth and creamy.
- Heat a grill or skillet over medium-high heat. Coat the chicken with chili powder and season generously with salt and pepper.
- Add a small amount of butter to the grill or skillet if needed to prevent sticking, then cook the chicken for a few minutes on each side until fully cooked. Set aside to cool for at least five minutes, then cut or shred into small pieces.
Assembly
- Combine the chicken, grapes, and about half of the sauce in a mixing bowl. Add additional sauce as needed until the filling is evenly coated.
- Fill each butter lettuce leaf with the chicken mixture.
- Thin the remaining sauce with water or oil until it reaches a smooth drizzling consistency, then drizzle over the wraps. Finish with lime juice before serving.
Notes
Store the chicken and grape mixture separately from the lettuce for up to three days in the fridge. Miso is a refrigerated paste with a thick texture and salty flavor that adds body and seasoning to the sauce. If miso is unavailable, adjust the sauce to replace both its thickness and saltiness by using more peanut butter for thickness and adding a little more soy sauce for seasoning.
