Ingredients
  

  • 1/2 cup uncooked quinoa
  • one 14-ounce can black beans, rinsed and drained
  • 1-2 individual chipotle peppers
  • 1/2 teaspoon each: garlic powder, onion powder, chili powder, cumin
  • 1 egg, beaten
  • 1 teaspoon salt
  • 1/4 cup panko breadcrumbs

Method
 

Preparation
  1. Cook the quinoa according to the package directions, then let it cool.
  2. Add black beans, cooked quinoa, chipotle peppers, and spices to a food processor. Pulse briefly until the mixture is combined and sticky while keeping some pieces of black bean intact.
  3. Move the mixture to a bowl and stir in the beaten egg and panko breadcrumbs. Shape the mixture into 4 thick burgers.
Cooking
  1. Warm a generous amount of olive oil in a nonstick pan over medium-high heat. Place the burgers in the pan and cook for a few minutes on each side, flipping carefully, until the outside is golden brown and crisp.
Serving
  1. Serve the burgers on buns with spicy mayo, avocado, lettuce, tomato, red onion, or other desired toppings.

Notes

Keep some black bean pieces intact when pulsing the mixture to help maintain the burger texture.
