Chipotle Sofritas Casserole with Corn Tortillas and Cheese

Ingredients
  

Enchilada sauce
  • 1 batch Blender enchilada sauce + a pinch of extra salt and 2-3 chipotle peppers
Casserole
  • 16 oz / 455 g tofu
  • 1 tablespoon oil
  • 20 4-inch round corn tortillas, cut into thin strips
  • 3 cups cheese (half crumbled cotija cheese and half shredded mozzarella)
Serving
  • cilantro, avocado, black beans for serving
  • Magic Green Sauce for serving

Method
 

Preparation
  1. Prepare the enchilada sauce. Transfer it to a saucepan and keep it at a low simmer while preparing the remaining ingredients. Taste and adjust the salt so the sauce is well seasoned.
  2. Preheat the oven to 375°F (190°C). Press excess moisture from the tofu.
Cooking
  1. Heat the oil in a large skillet. Add the tofu, breaking it into small crumbles as it cooks. Stir in 1-2 cups of sauce and simmer for 10-ish minutes. Taste the filling and season generously with salt.
Assembly
  1. Grease a 9×13 pan. Layer the tortillas, tofu mixture, sauce, and cheese, repeating for three layers and finishing with cheese on top.
  2. Cover the pan with greased foil and bake for 20-30 minutes until the casserole is bubbly. Remove the foil at the end of baking if you want the cheese to brown slightly.
Serving
  1. Serve the casserole with black beans, avocado, and other desired toppings.

Notes

This casserole freezes well. Assemble it as directed, freeze it before baking, then thaw and bake according to the recipe instructions when ready to serve.
