Preparation
- Add all dressing ingredients to a food processor and blend until smooth. Taste and adjust the flavor as desired, then transfer the dressing to a jar and rinse the food processor for later use.
- Boil the edamame in a pot of water for 3-5 minutes. Drain and set aside to cool.
- Slice the kale, carrots, bell peppers, cilantro leaves, and green onions into thin strips or shreds.
Assembly
- Place the cooked edamame in the food processor and pulse 5 times to create a minced texture. Transfer to a bowl.
- Pulse the cashews in the food processor until chopped, then add them to the bowl.
- Combine the kale, carrots, peppers, cilantro, green onions, edamame, and cashews and toss until evenly mixed.
- Add the dressing and gently toss a few times until the salad is coated. Serve immediately.
Notes
For the best freshness, keep the dressing separate from the salad ingredients and combine them just before serving. Agave nectar or sugar can replace the honey for a vegan option. The three cloves of garlic create a strong flavor, so use less if a milder garlic taste is preferred.
