Ingredients
  

French Toast Cups
  • 1/2 loaf French bread, torn into small pieces
  • 3 eggs
  • 1 cup milk
  • 1/4 cup half and half or cream
  • 1/4 cup sugar
  • 1 tablespoon vanilla
  • 1/4 teaspoon salt
Streusel Topping
  • 6 tablespoons cold butter, cut into small cubes
  • 1/4 cup + 2 tablespoons flour
  • 1/4 cup + 2 tablespoons brown sugar
  • 1 tablespoon cinnamon
Serving
  • powdered sugar
  • Pancake syrup or coconut palm syrup

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Grease a muffin tin, then place torn bread pieces into each opening until filled to the top.
  2. Whisk together the eggs, milk, cream, sugar, vanilla, and salt until combined. Add 3-4 tablespoons of the mixture over the bread in each cup.
  3. Mix the flour, brown sugar, and cinnamon. Work the cold butter into the dry mixture by hand until small crumbs form, then place a spoonful of the streusel over each cup.
Baking
  1. Bake for 20 minutes, or until the cups are puffed and golden brown.
  2. Finish the French Toast Cups with powdered sugar and syrup before serving.

Notes

For a drier, sturdier French toast texture, use no more than 3 or 4 tablespoons of egg mixture in each muffin cup. For a more moist texture, add a little more egg mixture; the cups will puff higher and settle slightly as they cool. Nutrition information is for one French Toast Cup.
