Ingredients
  

Donuts
  • 1¼ cups cake flour, sifted
  • ½ cup granulated sugar
  • 1¼ tsp. baking powder
  • 1/8 tsp. ground nutmeg
  • ¾ tsp. salt
  • ½ cup buttermilk
  • 1 egg, lightly beaten
  • 1½ tbsp. butter, melted
  • 1 1/4 cups cake flour, sifted
  • 1 1/4 tsp. baking powder
  • 1 1/2 tbsp. butter, melted
Dipping
  • 6 tbsp. butter, melted, for dipping
  • 1/2 cup cinnamon sugar, for dipping

Method
 

Preparation
  1. Combine the sifted flour, sugar, baking powder, nutmeg, and salt in a large mixing bowl.
  2. Add the buttermilk, beaten egg, and melted butter, then stir just until the batter comes together.
  3. Coat the donut pan with nonstick cooking spray and portion the batter into each cavity, filling each one about halfway.
Baking
  1. Bake the mini donuts for 4–6 minutes at 350°F (177°C), until the tops spring back when gently touched.
  2. Leave the donuts in the pan for 4–5 minutes to cool slightly before removing them.
Topping
  1. Dip each donut briefly into the melted butter, then coat with cinnamon sugar.
  2. Allow the finished donuts to cool and firm up for about 15–30 minutes, if desired.

Notes

Avoid overfilling the mini donut pan; each cavity should contain about half the available space or less. A plastic bag with the tip cut off can help portion the batter neatly into the donut openings. These donuts have a light, cakey texture from the cake flour and become fuller in flavor after the butter and sugar coating is added.
