Preparation
- Preheat the oven to 475°F (246°C). Line a baking sheet with foil and position an oven rack near the top, about 6 inches away.
- Cook the rice according to the package instructions.
- Combine the spices and olive oil to form a paste.
Baking
- Place the salmon skin side down on the foil-lined baking sheet. Spread the seasoning paste over the top of the salmon.

Cooking
- Warm the olive oil over medium heat. Add garlic, ginger, and lemongrass, then sauté for 5 minutes.
- Add brown sugar and curry paste, and cook for 3 minutes.
- Pour in the coconut milk. Adjust the sauce with fish sauce, lime juice, and lime zest to taste.
- Add spinach and stir until it wilts into the sauce.
Serving
- Serve the salmon over rice and top with the coconut curry sauce, lime juice, and fresh herbs.
Notes
Broiling the salmon can work, but the sugar coating may ignite if the fish is placed too close to the oven heating element. If concerned, use the regular oven method at the directed temperature and wait until the oven is fully preheated before adding the salmon.
