Ingredients
  

Apple filling
  • 4 Opal apples, chopped
  • 2 tablespoons almond meal
  • 1 teaspoon cinnamon
Topping
  • 3/4 cups + 2 tablespoons coconut oil (in liquid form)
  • 1/2 cup honey
  • 1 1/4 cup rolled oats
  • 1/2 cup chopped pecans
  • 1/2 cup almond meal
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt

Method
 

Preparation
  1. Heat the oven to 350°F (177°C). Grease a 9×13 baking dish.
  2. Combine the chopped apples with almond meal and cinnamon, then arrange the mixture evenly in the prepared baking dish.
Topping
  1. Whisk the liquid coconut oil and honey together until fully blended.
  2. Add the rolled oats, chopped pecans, almond meal, cinnamon, and salt to a large bowl. Stir in the coconut oil and honey mixture until the topping ingredients are evenly coated.
Baking
  1. Spread the oat topping over the apples in an even layer.
  2. Bake for 30-40 minutes, until the topping has begun to brown slightly.
  3. Allow the apple crisp to stand for 15-20 minutes before serving.

Notes

I made a quick Honey Goat Cheese Drizzle for the apple crisp photos using 2 ounces softened goat cheese, 2 tablespoons half and half, and 1 tablespoon honey. Whisk the ingredients together until smooth, then drizzle over the finished crisp.
