Ingredients

  • 3/4 cup coconut oil (measured while solid)
  • 4.5 oz / 130 g unsweetened chocolate
  • 1 cup packed brown sugar
  • 3 eggs
  • 1 teaspoon salt
  • 3/4 cup all purpose flour

Method

Preparation
  1. Preheat the oven to 350°F (177°C). Melt the coconut oil and unsweetened chocolate together over very low heat until smooth.
  2. Whisk the melted chocolate mixture with the brown sugar in a bowl. Add the eggs and whisk until the mixture thickens, about 30 seconds.
  3. Stir in the flour and salt just until combined. The batter will be thick, heavy, and slightly oily.
Baking
  1. Transfer the batter to a 9-inch square baking dish and spread evenly.
  2. Bake for 25-28 minutes. A small amount of oil on the surface or around the edges may remain after baking and will absorb as the brownies cool.
Cooling
  1. Allow the brownies to cool for a few hours or overnight for cleaner slices and a denser fudgy texture.

Notes

For the fudgiest texture, avoid overbaking the brownies and allow them to cool before slicing.
