Coconut Oil Granola Remix with Honey and Maple Syrup

Ingredients
  

  • 3 cups rolled oats
  • 1 heaping cup flaked unsweetened coconut
  • 1 heaping cup sliced almonds
  • 1 cup chopped pistachios
  • 1/4 cup flax seeds
  • 3/4 cup coconut oil, melted
  • 2 tablespoons honey
  • 2 tablespoons real maple syrup
  • 1 teaspoon cinnamon
  • 1 teaspoon salt
  • 1/2 cup golden raisins, or other dried fruit

Method
 

Preparation
  1. Preheat the oven to 300°F (149°C).
  2. Combine all ingredients except the golden raisins in a large bowl. Spread the mixture in a thin, even layer on a large baking sheet.
Baking
  1. Bake the granola mixture for 30 minutes. Add the golden raisins, then continue baking for another 15 minutes.
  2. Leave the baked granola on the baking sheet for 10-15 minutes so clusters can develop before serving.

Notes

This recipe is a remake of an older version. The sweeteners can be made with all honey or all maple syrup, though the combination of both provides the preferred flavor balance.
