Ingredients
  

Streusel
  • 6 tbs. flour
  • 6 tbs. dark brown sugar
  • 2 tbs. brewed coffee
  • 2 tbs. butter, melted
Cake
  • 3 cups flour
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1/4 tsp. baking soda
  • 1 cup plain yogurt or sour cream
  • 1 tsp. vanilla
  • 4 tbs. butter
  • 1/4 cup canola oil
  • 2 cups sugar
  • 2 eggs
  • 2 egg whites
Glaze
  • 1 cup powdered sugar
  • 1 tablespoon brewed coffee

Method
 

Preparation
  1. Preheat the oven to 350°F (177°C). Grease a Bundt pan.
  2. Prepare the streusel by combining the flour, dark brown sugar, brewed coffee, and melted butter.
Baking
  1. Mix the dry cake ingredients separately from the wet cake ingredients, then combine the two mixtures.
  2. Add half of the batter to the prepared pan, spread the streusel over the batter, and cover with the remaining batter.
  3. Bake for 50 minutes.
  4. Cool the cake for at least 30 minutes before adding the glaze.
Glaze
  1. Combine the powdered sugar and brewed coffee to make the glaze.
  2. Drizzle the glaze over the cooled cake before serving.

Notes

Allow the Bundt cake to cool before glazing so the coffee glaze remains visible on the surface.
