Ingredients
  

  • 2 cups rolled oats
  • 2 cups flaked unsweetened coconut
  • 1/2 cup peanut butter (extra as needed)
  • 1/2 cup honey (extra as needed)
  • 1/4 cup chia seeds
  • 1/2 teaspoon salt
  • 1/2 teaspoon vanilla
  • 1/2 cup chocolate chips

Method
 

Preparation
  1. Pulse the rolled oats and coconut together until they are coarsely broken down.
  2. Add the peanut butter, honey, chia seeds, salt, vanilla, and chocolate chips, then pulse again until the mixture is evenly combined and the chocolate chips are reduced into smaller pieces.
  3. Shape the mixture into balls. If the mixture is too dry to hold together, add a small amount of additional honey or peanut butter and mix again until it becomes sticky enough to roll.
  4. Freeze the bites until firm.
Storage
  1. Store the finished bites in the freezer or refrigerator.

Notes

The recipe can make about 20 to 40 bites depending on the size. Larger bites make around 20 pieces, medium bites make around 30 pieces, and smaller bites make around 40 pieces.
