Ingredients
  

Bacon and Onion Mixture
  • 1 pound (454 g) bacon, cut into small pieces
  • 1/2 onion, finely chopped
  • 1 clove garlic, minced
Dry Ingredients
  • 2/3 cup cornmeal
  • 2/3 cup flour
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
Wet Ingredients and Corn
  • 1 cup sour cream
  • 1/2 cup butter, melted
  • 1 egg
  • one 15-ounce (425 g) can corn, drained
  • one 15-ounce (425 g) can cream-style corn
Topping
  • 1 1/2 cups sharp white cheddar
  • Chopped chives

Method
 

Preparation
  1. Preheat the oven to 350°F (177°C).
  2. Cook the bacon pieces in a pan over medium heat until crisp. Remove the bacon from the pan, leaving some grease behind for the onion mixture. Add the chopped onion with a sprinkle of salt and cook until softened, then add the garlic and cook for 1 minute. Remove from heat and chop the bacon into small bits.
Mixing
  1. Combine the cornmeal, flour, sugar, baking powder, and salt in a bowl.
  2. Whisk the sour cream, melted butter, and egg in a separate bowl until smooth. Stir in the corn, cream-style corn, onion mixture, and half of the bacon.
  3. Add the dry ingredients to the wet mixture and stir just until combined.
Baking
  1. Transfer the mixture to a greased casserole dish and bake for 35 minutes.
  2. Remove the casserole from the oven, add the cheese and remaining bacon over the top, and bake for another 5 minutes.
  3. Sprinkle chopped chives over the finished casserole before serving.

Notes

Stir the batter only until the ingredients are combined to help maintain the casserole's tender texture.
