Ingredients
  

Creamy Cauliflower Rice
  • 6-8 cups chopped cauliflower
  • 4 cups vegetable broth + 2 cups water
  • 1/2 cup milk
  • 1 1/2 cups brown rice
  • 1 teaspoon salt (plus more to taste!)
Garlic Butter and Cheese
  • 2 tablespoons butter
  • 6-8 cloves minced garlic
  • 1/2 cup Mozzarella cheese for topping (more to taste)

Method
 

Preparation
  1. Cook the brown rice according to package directions, then set it aside.
  2. Bring the vegetable broth and water to a boil in a large pot. Add the cauliflower and cook for about 10 minutes, until the pieces are tender.
  3. Move the cooked cauliflower to a blender or food processor.
Blending
  1. Blend the cauliflower with milk or additional vegetable broth as needed to create a smooth, creamy consistency.
  2. Season the cauliflower sauce with salt, then pour it over the cooked rice and stir until combined.
Cooking
  1. Melt the butter in a large nonstick skillet and add the garlic. Cook over low heat for about 3-5 minutes until the garlic is fragrant.
  2. Add the creamy rice mixture to the skillet and stir until the garlic and butter are evenly incorporated.
  3. Add the mozzarella cheese on top or mix it through the rice until melted. Adjust seasoning with additional salt and pepper to taste.

Notes

Blend the cauliflower with liquid gradually to help control the sauce consistency and keep the creamy texture.
