Ingredients
  

Garlic Butter
  • 8 large cloves garlic, minced
  • 2 tablespoons butter
Cauliflower Sauce
  • 5-6 cups cauliflower florets
  • 6-7 cups vegetable broth or water
  • 1 teaspoon salt (more to taste)
  • 1/2 teaspoon pepper (more to taste)
  • 1/2 cup milk (more to taste)

Preparation
  1. Cook the minced garlic and butter together in a large nonstick skillet over low heat for several minutes, stirring until the garlic becomes soft and fragrant without browning. Remove from heat and set aside.
Cooking
  1. Bring the vegetable broth or water to a boil in a large pot. Add the cauliflower florets, cover, and cook for 7-10 minutes until the cauliflower is fork tender. Keep the cooking liquid in the pot.
  2. Transfer the cooked cauliflower to a blender using a slotted spoon. Add 1 cup of the cooking liquid, the garlic butter mixture, salt, pepper, and milk. Blend until very smooth, working in batches if needed.
  3. Adjust the consistency by blending in additional broth or milk as needed. Serve hot, adding a few drops of water, milk, or olive oil if the sauce begins to look dry.

Notes

A small amount of olive oil can be added for extra flavor and to help keep the sauce smooth. Some readers also enjoy adding Parmesan cheese for a richer, more savory finish.
