Preparation
- Cook the minced garlic and butter together in a large nonstick skillet over low heat for several minutes, stirring until the garlic becomes soft and fragrant without browning. Remove from heat and set aside.
Cooking
- Bring the vegetable broth or water to a boil in a large pot. Add the cauliflower florets, cover, and cook for 7-10 minutes until the cauliflower is fork tender. Keep the cooking liquid in the pot.
- Transfer the cooked cauliflower to a blender using a slotted spoon. Add 1 cup of the cooking liquid, the garlic butter mixture, salt, pepper, and milk. Blend until very smooth, working in batches if needed.
- Adjust the consistency by blending in additional broth or milk as needed. Serve hot, adding a few drops of water, milk, or olive oil if the sauce begins to look dry.
Notes
A small amount of olive oil can be added for extra flavor and to help keep the sauce smooth. Some readers also enjoy adding Parmesan cheese for a richer, more savory finish.
