Preparation
- Heat the oil in a large, wide skillet over medium-high heat. Season the chicken on both sides with the seasoning blend, adding more if needed to coat evenly.
Cooking
- Place the seasoned chicken in the hot skillet and cook for 3-4 minutes per side, until browned and cooked through (165°F (74°C)). Transfer the chicken to a plate and set aside.
- Add the remaining oil to the same skillet along with the shallots and sun-dried tomatoes. Cook for 5 minutes, stirring occasionally, until the shallots soften.
- Stir in the gnocchi and chicken broth. Simmer for 5 minutes, until the gnocchi becomes tender.
- Add the cream and spinach, then stir to combine. Continue cooking at a low simmer for a few minutes to thicken the sauce.
- Season with salt, pepper, and fresh thyme leaves to taste. Return the chicken to the skillet.
Serving
- Serve the chicken with creamy gnocchi and spoon additional sauce over the top. Finish with grated Parmesan on top or stirred into the sauce.
Notes
If you’re not into sun-dried tomatoes, tomato bruschetta can be used instead for a juicier, less chewy texture. Sun-dried tomatoes are easier to find and also work well. For the broth, chicken base mixed with water can be used when possible; this recipe used 1 heaping tablespoon mixed with about 2 cups water.
