Ingredients
  

Pasta
  • 8 oz / 225 g spirali pasta
  • up to 1/2 cup reserved pasta water
Sauce
  • 2 cloves garlic, minced
  • 1/4 cup sun-dried tomatoes packed in oil, sliced or chopped
  • about 1/3 cup dry white wine
  • 2/3 – 3/4 cup heavy cream
  • 1 cup spinach, chopped
  • salt and pepper to taste
Garnish
  • a big bunch of chopped chives or parsley
  • parmesan for serving

Method
 

Preparation
  1. Cook the pasta according to the package directions and reserve pasta water before draining.
Cooking
  1. Warm a skillet over medium heat. Add a small amount of oil from the sun-dried tomatoes, then cook the garlic and sun-dried tomatoes for 2-3 minutes until softened and fragrant.
  2. Pour in the wine and allow it to reduce. Add the cream and spinach, bring the mixture to a simmer, and season with salt and pepper.
  3. Add the cooked pasta to the skillet and use the reserved pasta water as needed to help the sauce coat the noodles evenly.
Serving
  1. Finish the pasta with chopped chives or parsley and Parmesan before serving.

Notes

Reserve pasta water before draining the pasta so it can be used to adjust the creamy sauce consistency.
