Cooking
- Melt the butter in a large pot over medium-high heat. Add the onion and potatoes, then sauté for 5-8 minutes until lightly golden, seasoning with salt and pepper.
- Pour in 6 cups of the broth and add the kale. Simmer for 5-10 minutes until the kale has softened and turned a deeper green.
Blending
- Carefully transfer the soup to a heavy-duty blender and blend for 2-3 minutes until completely smooth.
- Return the blended soup to the pan. Stir in the milk and add the remaining 2 cups broth as needed to reach the preferred thickness.
- Adjust the seasoning with salt and pepper before serving.
Serving
- Serve the soup with paninis, toasted wheat bread, or crackers, cheese, and hummus.
Notes
This recipe is very adaptable. Add more herbs, increase the potatoes, add more kale, or adjust the broth as desired. More kale will create a brighter green soup, while cooking the onions and potatoes too long can dull the flavor, so sauté them until golden without making them overly soft.
