Preparation
- Slice the unpeeled potatoes into thin pieces about 1/4 inch thick, using a mix of thinner and thicker slices if desired.
- Pour 1-2 cups oil into a large frying pan to a depth of about one inch. Heat over medium heat until a drop of water sizzles on the surface.
- While the oil heats, dip each potato slice in milk, then coat it with the fried chicken breading mix.
Cooking
- Place the coated potato slices into the hot oil immediately and fry for 2-3 minutes on each side, adjusting the heat as needed.
- Transfer the fried potato slices to a paper towel lined plate to drain.
Serving
- Serve the crispy potato mojos with ranch, ketchup, cheese, or another preferred sauce.
Notes
A homemade flour-and-spice batter can be used instead of the prepared fried chicken breading mix. Some coating crumbs may separate in the pan during frying, and the finished potatoes should be handled carefully to help keep the breaded layer attached.
