Crunchwrap Supreme with Beef and Queso Sauce Fresh Toppings

Ingredients
  

Beef Filling
  • 1 tablespoon olive oil
  • half an onion, minced
  • 3 cloves garlic, minced
  • 1 lb. (454 g) ground beef
  • 2 tablespoons taco seasoning (add about 1 teaspoon salt if it’s unsalted)
Queso Sauce
  • 4 tablespoons butter
  • 4 tablespoons flour
  • 1 cup milk
  • 8 oz / 225 g shredded Pepperjack cheese
Assembly and Toppings
  • large flour tortillas (burrito size)
  • something crunchy: tostada shells work well, but tortilla chips or Doritos can also work
  • lettuce, tomato, cilantro
  • sour cream
  • salsa
  • refried beans
  • guacamole

Method
 

Cooking
  1. Warm the oil in a large nonstick skillet over medium heat. Add the onion, garlic, and ground beef, then cook while breaking apart the meat until it is browned throughout. Stir in the taco seasoning and salt if needed.
  2. Melt the butter in a small saucepan. Whisk in the flour until smooth and cook for 1 to 2 minutes. Gradually add the milk, whisking with each addition. Once the sauce is smooth, remove it from the heat, mix in the cheese, and season to taste.
Assembly
  1. Place a large flour tortilla on a flat surface. Add the beef, queso, crunchy layer, sour cream, salsa or hot sauce, tomato, lettuce, and cilantro in the center.
  2. Fold the tortilla edges inward around the filling. Transfer the folded wrap to a hot oiled skillet and cook for a few minutes on each side until the outside is firm, crisp, and golden brown.
  3. Slice the Crunchwrap Supreme and serve with mashed avocado and hot sauce on top if desired.

Notes

Keep the crunchy layer in the center of the wrap so it stays distinct from the creamy and fresh toppings.
