Crunchy Roll Bowls with Crispy Tofu and Spicy Mayo

Ingredients
  

Bowls
  • 1 block extra firm tofu
  • 1 cup rice, uncooked
  • 2 cups frozen shelled edamame
  • 1 cucumber, finely diced
  • 1 avocado, cut into chunks or slices
  • 1 jalapeño, thinly sliced
Cooking
  • swish of neutral oil
  • 1/2 cup teriyaki or savory-sweet Asian-inspired sauce
Toppings
  • 1/2 cup crunchy fried onions, crushed
  • spicy mayo (see notes)
  • 1 jalapeno, thinly sliced

Method
 

Preparation
  1. Press the tofu to remove excess water.
  2. Prepare the rice according to package directions.
  3. Cook the edamame according to package directions.
Cooking
  1. Slice the tofu into cubes. Warm a small amount of oil in a skillet over medium-high heat, then add the tofu and cook until browned.
  2. Add about 1/4 to 1/3 cup of sauce, using enough to coat the tofu, and continue stir-frying until the tofu is browned again.
Assembly
  1. Build the bowls with rice, tofu, additional teriyaki sauce, edamame, cucumber, jalapeño, crunchy onions, and spicy mayo.

Notes

To make spicy mayo: Mix 2-3 tablespoons sriracha with 1/4-1/2 cup mayo. Adjust the ratios according to your preferred level of heat.
