  • 2 14-ounce cans chickpeas, drained and rinsed
  • 1/2 cup coconut milk (more as needed)
  • 1 1/2 tablespoons red curry paste
  • 1 tablespoon curry powder
  • 1 clove garlic
  • 1 teaspoon sea salt

Preparation
  1. Combine all ingredients in a food processor and blend or pulse until the hummus reaches a smooth consistency.
  2. Adjust the texture by adding more coconut oil, olive oil, or water as needed until it reaches your preferred thickness.

Notes

For extra heat and brightness, add a small squeeze of lime and a pinch of cayenne. Many curry pastes contain shrimp paste, so use a vegan curry paste or make your own if you need the hummus to be fully vegetarian or vegan.
