Ingredients
  

Cookie Dough
  • 2 sticks (16 tablespoons) butter
  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 2 teaspoons vanilla
  • 2 tablespoons real maple syrup
  • 2 eggs
  • 2 3/4 cup flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chocolate chunks
  • 1/2 cup milk chocolate chips
Caramel Filling
  • 1/2 cup caramel pieces
  • 3 tablespoons heavy whipping cream
Topping
  • coarse sea salt to taste

Method
 

Preparation
  1. Preheat the oven to 350°F (177°C). Microwave 8 tablespoons of the butter for 30 seconds, or until partially melted. Microwave the remaining 8 tablespoons for 10 seconds, or until soft enough to indent with a finger.
  2. Beat the softened butter, granulated sugar, and brown sugar with an electric mixer until creamy. Mix in the vanilla and maple syrup until smooth.
  3. Add the eggs and beat on low speed until incorporated. Mix in the flour, baking soda, and salt, adding the flour in batches if needed, until a smooth dough forms. If the dough sticks to your hands, mix in a few additional tablespoons of flour until it feels dry to the touch.
  4. Stir the chocolate chunks and milk chocolate chips into the dough.
  5. Microwave the caramel pieces with the heavy whipping cream for 2 minutes, then stir until completely melted and smooth.
Assembly
  1. Line a 9-inch or larger cast iron skillet with parchment paper. Press half of the cookie dough evenly into the skillet.
  2. Pour the melted caramel mixture over the dough and spread it evenly with a spoon. Cover the caramel with the remaining cookie dough.
Baking
  1. Bake for 15-25 minutes. For a softer, underbaked center, bake uncovered for 15 minutes. For a more fully baked center, cover with foil and continue baking for an additional 10-15 minutes.
Serving
  1. Remove the skillet from the oven and sprinkle the cookie with coarse sea salt. Let it rest for at least 1 hour before slicing so the pieces hold their shape.

Notes

Baking uncovered for 15 minutes produces an intentionally underbaked center. For a more set center, cover the skillet with foil and bake for an additional 10-15 minutes.
