Ingredients
  

  • ½ cup butter
  • 1 egg
  • 1 packet instant coffee, dissolved in 2 tablespoons water
  • 1 tablespoons oil
  • 1/2 teaspoon vanilla
  • 1 box chocolate cake mix
  • 1 ½ cup chocolate chips
  • 1 ½ cup white chocolate chips

Method
 

Preparation
  1. Preheat the oven to 350°F (177°C).
  2. Beat the butter until smooth. Beat in the egg until fully incorporated, then mix in the dissolved coffee, oil, and vanilla until combined.
  3. Add the cake mix in batches, beating slowly after each addition just until incorporated.
  4. Fold in the chocolate chips and white chocolate chips. Shape the dough into balls and arrange them on a baking sheet a few inches apart.
Baking
  1. Bake for 7-10 minutes, until the cookies have flattened evenly, the tops look set rather than wet, and slight cracks begin to form.
  2. Check that the cookies hold together and lift from the baking sheet easily with a spatula. If they do not hold together, bake a little longer.
  3. Transfer the cookies from the baking sheet and let them cool for a few minutes before serving.

Notes

Oven temperatures can vary, so use the baking time as a guide and rely on the visual signs of doneness for a soft, chewy texture. The cookies should be flattened, have slightly cracked and set tops, and hold together when lifted from the baking sheet.
