Ingredients
  

  • 1 cups rolled oats
  • 3-4 cups water
  • 1/4 teaspoon salt
  • ½ teaspoon vanilla extract
  • 4 tablespoons cocoa powder
  • 2 tablespoons sugar
  • 2 tablespoons ground flaxmeal
  • a dash of cinnamon
  • 2 egg whites
  • powdered sugar and chocolate chips for topping

  1. Add the rolled oats and salt to a saucepan over high heat. Pour in 3 cups water, bring the mixture to a boil, and cook for 3-5 minutes while stirring occasionally. Add ½ cup water as needed while the oatmeal thickens.
  2. Whisk 4 tablespoons water with the cocoa powder in a small bowl until smooth. Stir the cocoa mixture and vanilla extract into the saucepan until evenly combined.
  3. Reduce the heat to low. Add the egg whites and immediately whisk vigorously until fully blended. Continue stirring as the mixture becomes lighter in color and increases slightly in volume while the egg whites cook.
  4. Mix in the sugar, flaxmeal, and cinnamon until combined. Remove the oatmeal from the heat and serve with powdered sugar or chocolate chips as desired.

Notes
