Ingredients
  

Nutty Butter Topping
  • 1/3 cup walnuts
  • 1/3 cup pistachios
  • 1/4 cup (4 tablespoons) butter, softened or melted
  • 2 tablespoons brown sugar

  • English muffins
  • Honey
  • Mascarpone cheese

Method
 

Preparation
  1. Preheat the broiler using the low broil setting or the setting that works best for your oven.
  2. Finely chop the nuts in a food processor. Reserve a few spoonfuls of chopped nuts for topping, then combine the remaining nuts with butter and brown sugar in a small bowl.
Toasting
  1. Place the English muffins on a foil-lined baking sheet and toast under the broiler for about 3 minutes until crisp.
Assembly
  1. Spread the nut and butter mixture over the toasted English muffins.
  2. Return the muffins to the oven a few inches below the broiler for 1 minute, or until the topping is bubbly and lightly caramelized.
  3. Add a small dollop of mascarpone cheese, gently spread it over the warm topping, then finish with the reserved nuts and honey.

Notes

Reserve some chopped nuts before mixing the topping so the finished English muffin baklava has extra texture.
