Preparation
- Cook the pasta according to the package directions. Drain and toss with a small amount of oil to help prevent sticking.
Cooking
- Melt 2 tablespoons of butter over medium high heat. Add one clove of garlic and cook for about a minute until fragrant. Add the mushrooms and sauté for 5-10 minutes until softened and golden, then set aside.
- Add the remaining 2 tablespoons of butter to the pan and melt over medium high heat. Stir in the remaining garlic and cook for about a minute until fragrant.
- Add the flour and herbes de provence to the pan. Stir for a minute to cook the flour, then slowly add the milk while whisking to combine. Simmer the sauce until thickened, then season with salt and pepper.
Assembly
- Combine the sauce, cooked pasta, and mushrooms. Add the olive oil and additional water, broth, milk, or cream as needed to maintain the desired sauce consistency. Stir in the parsley just before serving.
Notes
Add the parsley shortly before serving to keep its fresh flavor and bright finish.
