Ingredients
  

Pesto
  • 10 garlic scapes
  • 1/4 cup almonds
  • 2 tbs. sunflower seeds
  • 2 tbs. olive oil
  • 1/4 cup freshly grated parmesan cheese
  • salt and pepper, as needed
Creamy dip
  • 1/2 cup Greek yogurt
  • sour cream and/or mayonnaise

Method
 

Preparation
  1. Wash the garlic scapes and trim away the ends, keeping the tender spiral sections. Chop the scapes into small pieces.
  2. Place the garlic scapes, almonds, sunflower seeds, olive oil, Parmesan cheese, and seasonings in a food processor. Pulse until the mixture reaches a pesto-like consistency.
  3. Transfer the blended mixture to a small bowl and stir in the Greek yogurt.
  4. Return half of the yogurt mixture to the food processor and blend until almost smooth. Combine it with the remaining mixture in the bowl.
  5. Stir in 3 tablespoons sour cream and/or mayonnaise, adjusting the amount as desired for the preferred creaminess.

Notes

This dip keeps well in the fridge for about 3 days.
