Ingredients
  

Dough
  • 1 1/2 cups all-purpose flour
  • 2 teaspoons fresh herbs of choice (such as thyme)
  • 1 teaspoon freshly ground black pepper, more or less to taste
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 2 tablespoons olive oil
  • 1/2 cup cold water
Serving
  • Cheese dip or soft cheese spread for serving

Method
 

Preparation
  1. Preheat the oven to 450°F/232°C. Add flour, fresh herbs, black pepper, salt, sugar, and olive oil to a food processor and pulse until the ingredients are evenly combined.
  2. Pour in the cold water and pulse for about 10 seconds, just until the dough begins to come together. Transfer the dough to a work surface, gently press it into one ball, divide it into four pieces, and allow the dough to rest for about 10 minutes.
  3. Roll each dough portion as thin as possible. If the dough pulls back while rolling, let it rest a little longer before continuing.
Baking
  1. Place each thinly rolled dough piece on parchment paper and transfer to a baking sheet.
  2. Bake for 4-5 minutes, checking periodically to prevent excessive browning. Flip each cracker piece and bake for another 4-5 minutes.
  3. Turn off the oven and leave the crackers inside for 1-2 hours to dry further and become crisp.
Serving
  1. Break the crackers into pieces and serve with cheese dip or soft cheese spread.
