Ingredients
  

Dry ingredients
  • 1 1/2 cups rolled oats
  • 1 1/2 cups pretzels
  • 1/2 cup unsweetened shredded coconut, toasted if desired
  • 1/4 cup chia seeds or flaxmeal (or a combination)
Wet ingredients
  • 1/2 cup peanut butter
  • 1/4 cup coconut oil, softened
  • 1/4 cup organic blue agave

Method
 

Preparation
  1. Process the rolled oats and pretzels separately in a food processor, giving each about 15 quick pulses, until the texture is crushed and falls between whole pieces and a fine grind.
  2. Combine all ingredients in a bowl and mix until evenly incorporated.
  3. Shape the mixture into balls, squeezing each one firmly as needed so it holds together.
Chilling
  1. Place the shaped bites in the refrigerator or freezer for 20-30 minutes until set.
Serving
  1. Serve the bites once chilled and firm.

Notes

Unsweetened coconut was used. For a more decorative finish, roll the bites in a small amount of toasted coconut or dip them in chocolate.
