Peppermint Mocha with Chocolate and Espresso Coffee

Ingredients
  

Peppermint Syrup
  • 1 1/2 cups water
  • 1 1/2 cups sugar
  • 1 bunch fresh mint leaves OR 1 teaspoon peppermint extract (or a combination of both)
Mocha
  • 3/4 cup milk
  • 1 oz / 30 g unsweetened chocolate bar or baking bar (not cocoa powder)
  • 1/2 cup espresso or strongly brewed coffee
Toppings
  • whipped cream
  • crushed candy canes

Method
 

Preparation
  1. Bring the water to a gentle boil, then stir in the sugar until it fully dissolves.
  2. Add the fresh mint leaves or peppermint extract and allow the mixture to infuse for 10-15 minutes with the heat off or on low. Remove the mint leaves and reserve the syrup in the refrigerator for future peppermint mochas.
Cooking
  1. Warm the milk and unsweetened chocolate together on the stovetop or in the microwave until the chocolate has melted.
  2. Transfer the milk mixture to a glass jar, cover the jar with its lid, wrap the jar with a towel because the metal lid will become hot, and shake until the mixture becomes foamy.
  3. Pour the foamed milk mixture into a mug. Stir in the coffee and 2-3 tablespoons of mint syrup.
  4. Finish the drink with whipped cream and crushed candy cane pieces.

Notes

Extra mint syrup can be refrigerated and used for future peppermint mochas.
