Preparation
- Preheat the oven to 350°F (177°C). Grease a square baking dish (see notes) with nonstick cooking spray or butter.
- Using an electric mixer or a large spoon, combine the butter, brown sugar, pumpkin, and eggs until smooth. Add the flour, baking powder, salt, and spices, then mix just until combined. Transfer the batter to the prepared baking dish.
Topping
- Combine all topping ingredients and work the mixture with your fingers until fine crumbs form. Scatter the streusel evenly over the cake batter.
Baking
- Bake for 45 minutes, adding a little more time if the center is not set. The finished cake should be firm and puffy.
Glaze
- Melt the butter in a small saucepan. Add the powdered sugar and stir until incorporated. Mix in the vanilla and maple syrup while keeping the pan over medium-low heat, then continue stirring until the glaze is smooth. Add a small amount of additional liquid if needed to thin the consistency.
- Drizzle the smooth glaze over the cake.
Notes
The pictured version used an unusual pan size of about 6×11 inches. A pan close to that size will work, but a 9-inch square baking dish is recommended.
