Ingredients
  

Chocolate Peanut Butter Coating
  • 2 cups semi-sweet chocolate chips
  • 1 cup peanut butter
  • 1/2 cup salted butter
  • 2 teaspoons vanilla extract
  • pinch of salt
Cereal
  • 12-oz. (340 g) box of rice Chex cereal (about 10 cups)
Powdered Sugar Coating
  • 2 cups powdered sugar (more as needed / desired)

Method
 

Preparation
  1. Add the chocolate chips, peanut butter, and butter to a large microwave-safe bowl. Heat in 30 second intervals, stirring between each interval, until the mixture is fully melted and smooth.
  2. Mix the vanilla extract and salt into the melted chocolate mixture.
  3. Pour the chocolate mixture over the cereal. Divide the cereal between two large bowls if needed to make the large batch easier to handle.
  4. Use a wooden spoon to gently stir the cereal and coating together, taking care to keep the cereal pieces intact.
  5. Place the coated cereal into a bag and sprinkle the powdered sugar over the top. Shake gently until the pieces are covered.
  6. Spread the coated cereal onto a couple of baking sheets or parchment paper and allow it to cool and set.

Notes

If using a paper bag is not preferred, use several smaller plastic bags instead. Since the smaller bags hold less, divide the cereal into multiple batches. Although adding powdered sugar first may seem logical, adding it over the coated cereal and shaking helps create better clusters.
