Rainbow Roll Ups
  • carrots, cut into matchsticks
  • cucumbers, cut into matchsticks
  • red cabbage
  • curry hummus
  • cooked rice or quinoa (optional)
  • peanuts and cilantro
  • collard greens (leaf)
Peanut Sauce
  • 3/4 cup peanut butter
  • 1/4 cup soy sauce (tamari or coconut aminos if gluten free)
  • 1/4 cup rice vinegar
  • 1/4 cup water
  • 2 tablespoons honey
  • 1 clove garlic

Method
 

Preparation
  1. Trim the thick center stem of each collard leaf by cutting it down without removing it completely, leaving the leaf flexible enough to roll.
  2. Place the fillings on the collard leaf, fold in the sides, and roll the leaf tightly from the bottom upward to secure the filling.
Peanut Sauce
  1. Blend the peanut butter, soy sauce, rice vinegar, water, honey, and garlic in a blender or food processor until smooth.

Notes

You can steam the collard leaves to make them easier to roll. Running the leaves under hot water or placing warm rice on them can also soften them slightly. These wraps are best assembled fresh because the hummus can release moisture when combined with the vegetables. Prepare the components ahead, keep them refrigerated, and roll the wraps just before eating. Toothpicks can help hold them together. For a sugar-free version, use white distilled vinegar instead of the honey-containing option.
