Ingredients
  

Dhal Base
  • 2 ½ cups red lentils
  • 5-6 cups of water (a large pot half full)
  • ½ cup coconut milk
  • 1/3 cup water
Seasonings and Flavorings
  • 2 tablespoons curry paste
  • 1/2 teaspoons salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon cayenne
  • 2 teaspoons curry powder
  • ½ teaspoon turmeric
  • 1 teaspoon chili powder
  • 2 tablespoons sugar
  • lime juice
Garnish
  • green herbs for garnish (I used malunggay leaves – you could use cilantro, green onions, etc.)

Method
 

Cooking
  1. Bring the water to a boil in a large pot.
  2. Add the red lentils and cook uncovered for 10 minutes, stirring every few minutes to keep them from sticking to the bottom. Remove the pot from the heat.
  3. Mix in the remaining ingredients until evenly combined. Adjust seasoning with additional salt and finish with green herbs for garnish.

Makes six 1 cup servings.
