Preparation
- Whisk 1/2 cup of the white wine with the cornstarch until combined.
- Process or finely chop the cheese into small, even pieces for easier melting.
Cooking
- Rub the garlic clove over the bottom and sides of a heavy-bottomed pot, then discard it. Heat the wine mixture over medium-low heat until it thickens and begins bubbling. Add 1 tablespoon of wine if needed to reach a smooth gravy-like consistency.
- Add the cheese gradually, whisking gently after each addition until melted and incorporated. Continue adding cheese in portions until all of it has melted. If the mixture becomes too thick or elastic, add 1 tablespoon of wine to loosen it.
- Season with salt. Serve immediately while the fondue is warm and smooth, keeping it over low, even heat to maintain a dippable texture.
Notes
You can also use shredded Swiss cheese to make this easy fondue even simpler. Heat control is important: low heat may prevent proper melting, while high heat can cause the cheese to clump.
