Ingredients
  

Tofu Marinade
  • 12 oz / 340 g extra firm tofu
  • 1/2 cup soy sauce
  • 1/4 cup rice vinegar
  • 2 tablespoons agave
  • 1 clove garlic, minced
Sushi Bowls
  • white or brown rice
  • carrots
  • cucumbers
  • avocado
  • sesame seeds
  • greens, such as microgreens
  • pickled ginger
Toppings
  • soy sauce + wasabi, for topping
  • sriracha + mayo, for the spicy mayo drizzle

Method
 

Tofu Preparation
  1. Press the tofu to remove excess moisture, then cut it into small cubes.
  2. Combine the tofu with the soy sauce, rice vinegar, agave, and garlic. Let it marinate while preparing the remaining bowl ingredients.
Bowl Preparation
  1. Prepare the rice, vegetables, and toppings for the bowls.
Cooking
  1. Heat a little oil in a skillet. Drain away the excess marinade, then add the tofu to the hot pan.
  2. Cook the tofu until browned, gently stirring or shaking the pan occasionally to prevent over-browning.
Assembly
  1. Divide the rice, tofu, and vegetables among bowls. Finish with soy sauce, spicy mayo, sesame seeds, and pickled ginger.

Notes

For a vegan version, replace the mayo with a vegan mayonnaise, either prepared or homemade with tofu.
