Vegan Broccoli Cheese Soup with Almond Milk Recipe

Ingredients
  

  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1/2 an onion, chopped
  • 1-2 stalks celery, chopped
  • 4-5 large carrots, chopped
  • 1 large potato, peeled and chopped
  • 2-3 cups broccoli florets, in large pieces for easy removal
  • 2-3 cups vegetable broth
  • 2 cups almond milk (unsweetened)
  • 1/4 cup nutritional yeast – optional, see notes
  • 1 1/2 – 2 teaspoons sea salt

Method
 

Cooking
  1. Warm the olive oil over medium-high heat. Add the onion, celery, carrots, garlic, and potatoes, then sauté until the vegetables have softened, about 10 minutes.
  2. Add the broccoli, vegetable broth, and almond milk. Simmer until the mixture is bubbly and the broccoli is bright green, about 5 minutes.
  3. Use tongs to remove most of the broccoli pieces and set them aside. Blend the remaining soup mixture until very smooth and creamy, working in batches if needed.
  4. Return the soup to the pot, add the reserved broccoli, and pulse or blend briefly to combine while keeping some texture. Stir in nutritional yeast and salt, adjust seasoning to taste, and serve.

Notes

To make the croutons, heat 1/4 cup olive oil (more as needed) in a skillet over medium-high heat. Add a smashed garlic clove and warm for a few minutes without browning, then remove the garlic. Add cubed bread (about 6 thick slices cut into chunks) and toss until golden brown and crisp-chewy. Drain on paper towels and season with salt. A spoonful of pesto can also be added for extra flavor. If the blended soup is too thick, add an additional 1/2 cup or so of liquid. Nutritional yeast is optional and adds a salty, cheese-like flavor along with extra vitamins. Nutrition does not include croutons.
