Cookie Dough
  • 1 stick salted butter (1/2 cup, very soft)
  • 3/4 cup white sugar
  • 2 tablespoons brown sugar, packed
  • 1 egg
  • 1/2 teaspoon vanilla
  • 1 cup + 2 tablespoons flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup chocolate chips
Brownie Batter
  • 18.9 oz / 535 g brownie mix

Method
 

Preparation
  1. Use an electric mixer to beat the very soft butter with both sugars in a small mixing bowl until combined.
  2. Mix in the vanilla and egg, then beat again until the mixture is smooth.
  3. Add the flour, baking soda, and salt, stirring gently until incorporated.
  4. Fold in the chocolate chips, then refrigerate the cookie dough until it is needed.
Baking
  1. Preheat the oven to 350°F (177°C). Prepare the brownie batter according to the package directions.
  2. Spread the brownie batter into a glass 8×8 or 9×9 baking dish.
  3. Place pieces of cookie dough over the brownie batter. Use the amount that fits the pan, saving any extra dough for regular cookies if needed.
  4. Press the dough pieces lightly so they sink slightly into the brownie batter.
  5. Bake for 35-40 minutes, using 35 minutes for a gooier center or 40 minutes or more for a more fully baked texture. Cover with foil during baking if needed to prevent the cookie pieces from becoming too dark on top.
  6. Allow the brownies to stand for 15-20 minutes before cutting into pieces.

Notes

Avoid removing these too early just because the cookie layer looks browned, as the brownie portion may still be underdone and can sink in the center. Alternating covered and uncovered baking can help balance the cookie color and brownie doneness. One approach is to bake uncovered for the first 20 minutes, covered for the next 10 minutes, and uncovered for the final 5 minutes. You can also cover only the edges with foil so the center continues baking without over-browning the edges.
