Preparation
- Line a pie plate with parchment paper or foil. Spread the raspberries and pecans in a single layer across the bottom.
Chocolate Layer
- Melt 4 tablespoons butter and 4 tablespoons coconut oil together until smooth. Whisk in the cocoa powder, 2 tablespoons honey, 1/2 teaspoon vanilla, and a pinch of salt. Taste and adjust if needed, then pour the chocolate mixture over the raspberries and pecans in the pie plate.
Almond Butter Layer
- Melt the remaining 4 tablespoons butter and 4 tablespoons coconut oil until smooth. Stir in the almond butter, remaining 2 tablespoons honey, 1/2 teaspoon vanilla, and a pinch of salt until the mixture is melted and combined. Taste and adjust if needed, then pour over the chocolate layer.
Chilling and Serving
- Freeze for at least 30 minutes until the bars are firm. Cut into wedges to serve.
Notes
The two melted mixtures can be combined, but keeping them separate creates a layered effect. The texture is between a fudgsicle and chocolate bark, and allowing the bars to soften slightly before eating makes them more fudgy and smooth.
