Bacon
  • 6 slices bacon
Soup
  • 4 tablespoons butter
  • 2 cups mirepoix (celery, carrots, and onions, all minced)
  • 3 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon favorite seasoning
  • 1/4 cup all purpose flour
  • 3 cups whole milk
  • 1-2 cups chicken broth
  • 2 large russet potatoes, peeled and cubed (3 cups cubed)

Preparation
  1. Bake the bacon on a parchment-lined baking sheet at 400°F (204°C) for 20 minutes. Crumble or cut the cooked bacon into pieces.
  2. Melt the butter in a soup pot, then cook the mirepoix, garlic, salt, and seasoning until the vegetables become soft.
Cooking
  1. Stir the flour into the vegetables and butter, cooking for a few minutes to remove the raw flour flavor.
  2. Add the milk gradually, mixing after each addition until the mixture becomes smooth and creamy.
  3. Add the potatoes and enough chicken broth to reach the preferred consistency.
  4. Simmer the soup for 30-40 minutes until the potatoes are very tender and the soup has thickened.
  5. Stir the bacon pieces into the soup when ready to serve.

Notes

The soup thickens as it simmers and continues to become thicker as it cools, so add chicken broth gradually to reach the desired consistency.
