Ingredients
  

Pasta
  • 1 cup peas
  • 2 cups dry pasta (whole wheat shells)
  • 1/4 cup reserved pasta water
  • 1/2 tablespoon butter
Cheese mixture
  • 3/4 cup ricotta cheese or cottage cheese
  • 3 cloves garlic
  • 1/3 cup parmesan cheese, freshly grated
  • 1/3 cup mozzarella cheese, freshly grated
  • 1 teaspoon olive oil
  • fresh torn basil
Topping
  • 4 thinly sliced pieces of fresh mozzarella

Method
 

Preparation
  1. Cook the peas until tender, then drain and set aside.
  2. Cook the pasta until al dente. Drain the pasta and combine it with the peas and butter.
Sauce and Assembly
  1. While the pasta and peas cook, blend the ricotta cheese, garlic, and olive oil in a food processor until smooth. Season with salt and pepper, then mix in the grated cheeses and basil.
  2. Combine the cheese mixture with the pasta and add the reserved pasta water. Stir until the sauce is smooth and evenly coats the pasta.
  3. Portion the pasta into ramekins and place one slice of mozzarella on each serving.
Broiling
  1. Broil the ramekins at 400°F (204°C) or higher for about 5 minutes, until the mozzarella has melted.

Notes

Reserve the pasta water before draining so it can help create a smooth, creamy sauce texture.
