Poblano Sauce with Creamy Spinach and Roasted Peppers

Ingredients
  

Roasted Vegetables
  • 1 tablespoons olive oil
  • 4 garlic cloves, peeled
  • 1 onion, coarsely chopped
  • 2 poblano peppers, cut into large strips
Creamy Sauce Base
  • 6 tablespoons butter
  • 1/2 cup flour
  • 2 cups milk (warm)
  • 2 cups chicken broth (warm)
  • 1 teaspoon salt
Greens
  • 1 cup spinach leaves

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C). Wrap the garlic in foil with a small amount of oil. Coat the poblano peppers and onion with the remaining oil.
  2. Arrange the garlic, poblano peppers, and onion on a baking sheet. Roast for 30 minutes, or until the vegetables are very soft.
Cooking
  1. Melt the butter in a saucepan, then whisk in the flour to create a thick mixture. Cook for a few minutes.
  2. Gradually whisk in the warm milk and chicken broth. Continue whisking and simmering until the sauce is smooth and thickened, 5-10 minutes.
Blending
  1. Add half of the creamy sauce mixture to a blender or food processor along with the roasted vegetables and spinach. Blend until mostly smooth.
  2. Return the blended mixture to the saucepan and stir it together with the remaining creamy sauce base. Adjust the seasoning with additional salt, pepper, or other seasoning as desired.
Serving
  1. Use the sauce as a topping or accompaniment for enchiladas, burritos, veggie bowls, quesadillas, eggs, breakfast hash, or other dishes.

Notes

The sauce will become thicker the longer it simmers. Leftover sauce or sauce that needs a thinner consistency can be adjusted by adding a small amount of chicken broth or water until it reaches the desired texture.
