Ingredients
  

Soup
  • 2 cups beef broth
  • 3 tablespoons brown sugar
  • 6 tablespoons balsamic vinegar
  • 2 tablespoons soy sauce
  • 1 cup coarsely chopped onion
  • 8 garlic cloves
  • 4 (28-ounce) cans whole tomatoes, drained
  • 1 cup half-and-half (or heavy cream)

  • Cracked black pepper

Method
 

Preparation
  1. Combine 1 cup of the broth with the brown sugar, balsamic vinegar, and soy sauce in a small bowl.
  2. Coat a 13 x 9-inch baking pan with cooking spray, then add the onion, garlic, and drained tomatoes. Pour the broth mixture over the vegetables and tomatoes.
Cooking
  1. Bake the tomato mixture at 500°F (260°C) for 50 minutes, or until the vegetables are lightly browned.
  2. Transfer the roasted tomato mixture to a blender. Add the remaining 1 cup broth and the half-and-half, then blend until smooth.
  3. Strain the blended soup through a sieve into a bowl and discard the solids.
Serving
  1. Garnish the soup with cracked black pepper and serve with bread and cheese.

Notes

Roast the tomato mixture until the vegetables are lightly browned to develop the soup's deep roasted flavor.
